  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium yellow onion, chopped
  • 2 green onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp vegetable oil

Instructions

  1. Rinse jasmine rice under cold water until water runs clear. Cook or use leftover rice.
  2. Heat vegetable oil in a large pan over medium heat. Sauté onions and garlic until fragrant (about 3 minutes).
  3. Add bell peppers; cook until slightly softened (about 5 minutes).
  4. Push veggies aside; add shrimp to the pan. Season with Cajun seasoning and cook until pink and opaque (about 3–4 minutes).
  5. Stir in cooked rice and soy sauce; mix well and heat through (about 5 minutes).
  6. Garnish with green onions before serving.
