  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian)
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 1 medium onion, diced
  • ⅓ cup ketchup (for glazing)
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a skillet over medium heat, sauté diced onions until translucent. Add minced garlic and cook for an additional minute until fragrant.
  3. In a large bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, eggs, parsley, salt, pepper, and half of the Parmesan cheese. Mix gently until just combined.
  4. Transfer the mixture to the loaf pan and shape into a loaf. Top with ketchup and sprinkle the remaining Parmesan cheese over the top.
  5. Bake for 45-55 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  6. Let it rest for 10 minutes before slicing to retain moisture.
