- 2 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian)
- 2 large eggs
- ¼ cup fresh parsley, chopped
- 1 medium onion, diced
- ⅓ cup ketchup (for glazing)
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.
- In a skillet over medium heat, sauté diced onions until translucent. Add minced garlic and cook for an additional minute until fragrant.
- In a large bowl, combine ground chicken, sautéed onion and garlic, breadcrumbs, eggs, parsley, salt, pepper, and half of the Parmesan cheese. Mix gently until just combined.
- Transfer the mixture to the loaf pan and shape into a loaf. Top with ketchup and sprinkle the remaining Parmesan cheese over the top.
- Bake for 45-55 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing to retain moisture.
