  • 1 lb breakfast sausage (spicy or mild)
  • 6 large eggs
  • 1 cup sharp cheddar cheese (grated)
  • 1 cup whole milk
  • ¼ cup all-purpose flour
  • ½ cup sour cream
  • ¼ cup green onions (chopped)
  • Salt, pepper, garlic powder (to taste)

Instructions

  1. In a skillet over medium heat, brown the breakfast sausage until crumbly. Drain excess fat if needed.
  2. In a bowl, whisk together eggs, salt, pepper, and garlic powder. Pour into the skillet with the sausage and scramble until just set.
  3. Lay each tortilla flat and spoon in the sausage-egg mixture, topping with cheddar cheese before rolling tightly.
  4. In another saucepan, melt butter over medium heat. Whisk in flour until golden; gradually add milk while stirring until thickened. Season to taste.
  5. Preheat your oven to 350°F (175°C). Spread half of the gravy in a baking dish, place rolled tortillas seam-side down, then cover with remaining gravy.
  6. Bake uncovered for 25-30 minutes until bubbly and golden. Garnish with chopped green onions before serving.
