  • 2 tbsp yellow curry powder
  • 1 cup full-fat coconut milk
  • 1 tbsp fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 cup bell peppers, sliced (assorted colors)
  • 1 large onion, chopped
  • 1 scotch bonnet pepper (optional), chopped
  • 1 cup low-sodium chicken broth or water
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping onions, peppers, garlic, and ginger into small pieces.
  2. In a large pot over medium heat, add oil and sauté chopped onions until translucent. Add garlic and ginger; sauté until fragrant.
  3. Stir in yellow curry powder until aromatic. Add chicken thighs and coat well with the spices; cook until lightly browned.
  4. Pour in coconut milk and chicken broth or water; stir to combine.
  5. Add sliced bell peppers and scotch bonnet pepper (if using). Bring to a gentle simmer over low heat.
  6. Cover and let simmer for about 30 minutes until the chicken is cooked through and tender.
