  • 1 cup long grain white rice
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium yellow onion, chopped
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes (fire-roasted recommended)
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro

Instructions

  1. Prep your ingredients by chopping bell peppers and onion; rinse rice under cold water.
  2. In a large skillet over medium heat, sauté onions in olive oil until translucent. Add bell peppers and cook until softened.
  3. Increase heat and add ground turkey; cook until browned, breaking it apart as it cooks.
  4. Stir in rinsed rice and taco seasoning; mix well to coat the rice with flavors.
  5. Pour in chicken broth and diced tomatoes; bring to a gentle boil, then reduce heat to low. Cover and simmer for about 20 minutes until rice is tender.
