  • 4 fresh flounder fillets (about 6 oz each)
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp unsalted butter (divided)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 garlic cloves (minced)
  • Chopped parsley for garnish

Instructions

  1. Rinse flounder fillets under cold water and pat dry with paper towels.
  2. Season the fillets with salt and pepper, then dredge in flour until lightly coated.
  3. In a large skillet, melt 4 tablespoons of unsalted butter over medium heat until bubbly.
  4. Fry the coated flounder fillets for 3-4 minutes on each side until golden brown and crispy; they should release easily from the pan.
  5. Remove fish from the skillet and lower heat slightly. If needed, add more butter, then sauté minced garlic until fragrant (about 30 seconds).
  6. Stir in fresh lemon juice and zest, then drizzle over the fried fish.
