Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 3 cloves fresh garlic (minced)
  • 1 medium onion (finely chopped)
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 tsp Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare the Meatballs: In a large bowl, mix ground beef, breadcrumbs, egg, minced garlic, salt, pepper, and chopped onion until combined. Form into 1-inch balls.
  2. Sear the Meatballs: Heat olive oil in a large pot over medium-high heat. Add meatballs in batches; brown on all sides (about 5 minutes per batch). Remove and set aside.
  3. Add Vegetables and Broth: In the same pot, sauté diced carrots and celery until softened. Pour in canned tomatoes and beef broth; stir to deglaze.
  4. Season the Stew: Add Italian herbs along with salt and pepper. Return meatballs to the pot and bring to a gentle simmer.
  5. Cook Until Tender: Cover and cook on low heat for about 30 minutes or until meatballs are cooked through.
  6. Serve and Enjoy: Ladle stew into bowls and enjoy hot! Pair with crusty bread or over creamy polenta.
