  • 1 lb raw shrimp, peeled and deveined
  • 1/2 cup freshly squeezed lime juice (about 4 limes)
  • 1/2 medium red onion, thinly sliced
  • 1 large ripe tomato, diced
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 jalapeño, finely diced (adjust to taste)
  • 1 tsp sea salt
  • 1 avocado, sliced (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry. Chop into bite-sized pieces.
  2. In a bowl, combine the shrimp and lime juice. Refrigerate for 15-20 minutes until shrimp turn opaque.
  3. While marinating, dice the red onion, tomato, jalapeño, and cilantro in a separate bowl.
  4. Drain excess lime juice from the shrimp if desired. Mix shrimp with diced vegetables and salt; toss gently to combine.
  5. Serve in bowls; top with avocado slices just before serving and garnish with extra cilantro or lime wedges.
