  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp poppy seeds
  • ½ cup unsalted butter, softened
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 3 large eggs
  • ½ cup whole milk
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Zest of 1 lemon (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds until combined.
  3. In another bowl, beat softened butter until creamy. Gradually add granulated sugar and mix until light and fluffy.
  4. Beat in eggs one at a time along with lemon zest and juice until well incorporated.
  5. Gradually mix dry ingredients into the wet mixture while alternating with milk. Stir gently until just combined.
  6. Fill each liner about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely before frosting.
  7. For frosting, beat together softened butter and powdered sugar until smooth. Add vanilla extract and lemon zest/juice until creamy.
  8. Frost cooled cupcakes as desired.
