  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (sliced)
  • 1 ripe avocado (diced)
  • 1 orange (segmented)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup toasted pine nuts
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Create the dressing by whisking together olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and pepper in a small bowl until smooth.
  2. In a large mixing bowl, combine mixed greens with cherry tomatoes and cucumber. Toss gently to coat with dressing.
  3. Fold in diced avocado and orange segments carefully for presentation.
  4. Top with toasted pine nuts before serving.
