  • 1 cup diced English cucumbers (about 150g)
  • 1/2 cup crumbled feta cheese (about 75g)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the beets thoroughly and wrap them in aluminum foil. Roast for 45-60 minutes until tender.
  2. Allow the roasted beets to cool for about 15 minutes before peeling off the skins using paper towels.
  3. Chop the cucumbers into bite-sized pieces while waiting for the beets to cool.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. In a large bowl, combine chopped cucumbers, peeled beet cubes, crumbled feta cheese, and fresh dill. Drizzle with dressing and toss gently to combine.
