  • 2 medium sweet potatoes (about 400g), diced
  • 1 large apple (about 200g), diced
  • ½ small red onion, finely chopped
  • ½ cup pecans, toasted
  • ½ cup dried cranberries
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. Combine with 2 cups of water in a saucepan; bring to a boil over medium heat. Cook for about 15 minutes until water is absorbed. Fluff with a fork.
  2. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender.
  3. In a bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, diced apple, red onion, pecans, and cranberries. Drizzle with dressing and toss gently.
