  • 1 lb ground beef (80/20)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 stalks celery, finely chopped
  • 28 oz canned San Marzano tomatoes
  • 1/2 cup red wine
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • Salt and pepper to taste
  • Pasta of choice (spaghetti or pappardelle)

Instructions

  1. Set the Instant Pot to 'Sauté' mode. Add 2 tbsp olive oil and sauté the chopped onion until translucent.
  2. Stir in minced garlic, diced carrots, and celery; cook for 2-3 minutes.
  3. Add ground beef; break it apart with a wooden spoon and brown for about 5-7 minutes.
  4. Pour in canned tomatoes and red wine, scraping any browned bits from the bottom.
  5. Season with oregano, basil, salt, and pepper; stir to combine.
  6. Close the lid and set to 'Manual' high pressure for 25 minutes. Allow a natural release for 10 minutes before venting.
