  • 34 boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 cup jasmine rice
  • 1/2 cup teriyaki sauce
  • 1 tsp fresh ginger, grated
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds (toasted)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar

Instructions

  1. Rinse jasmine rice under cold water until water runs clear. Cook in a saucepan with 1.5 cups of water; bring to boil, then cover and simmer for 15 minutes.
  2. Heat oil in a skillet over medium-high heat. Season cubed chicken with salt and pepper; sauté until golden brown (6-8 minutes).
  3. Add diced pineapple and grated ginger; stir for about 3-4 minutes until pineapple caramelizes.
  4. Pour teriyaki sauce over chicken mixture; reduce heat and simmer for another 5 minutes.
  5. Fluff cooked rice with a fork and serve topped with chicken and pineapple mixture. Garnish with green onions and sesame seeds.
