  • 4 salmon fillets (approximately 6 oz each)
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan over medium heat, combine coconut milk, lime juice, minced garlic, and grated ginger. Stir gently until heated through but not boiling.
  2. Season both sides of the salmon fillets with salt and pepper.
  3. Carefully place the seasoned salmon fillets into the warm coconut milk mixture.
