Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla until smooth.
  4. Gradually combine wet ingredients with dry ingredients; stir until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Once cooled, remove a small piece from the center of each cupcake and fill it with raspberry jam or red gel filling.
  7. Beat heavy cream with powdered sugar until soft peaks form; frost cupcakes generously.
