Buffalo Chicken Stuffed Peppers are a flavorful and satisfying dish that brings a spicy twist to your dinner table.   • 4 large bell peppers
  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 1 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, chopped
  • 4 oz cream cheese, softened
  • 1 tsp poultry seasoning
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet with olive oil, cook diced chicken over medium heat until browned (6-8 minutes).
  4. In a bowl, mix cooked chicken with cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, green onions, poultry seasoning, salt, and pepper.
  5. Stuff each pepper with the chicken mixture and place in a baking dish.
  6. Cover with foil and bake for 25 minutes until tender.
  7. Garnish with additional green onions before serving.
