- 4 large bell peppers
- 3 cups cooked, shredded boneless skinless chicken breasts
- 1 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 green onions, chopped
- 4 oz cream cheese, softened
- 1 tsp poultry seasoning
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet with olive oil, cook diced chicken over medium heat until browned (6-8 minutes).
- In a bowl, mix cooked chicken with cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, green onions, poultry seasoning, salt, and pepper.
- Stuff each pepper with the chicken mixture and place in a baking dish.
- Cover with foil and bake for 25 minutes until tender.
- Garnish with additional green onions before serving.
