Description

Smoked Mac and Cheese is a delightful twist on a classic comfort food favorite, combining creamy cheeses with a rich smoky flavor that elevates the dish to new heights.


Ingredients

  • 1 pound elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups whole milk
  • 4 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 teaspoon smoked paprika
  • Salt & pepper to taste
  • 1 cup breadcrumbs for topping (optional)

Instructions

  1. Cook elbow macaroni in boiling water until al dente (7-8 minutes). Drain and set aside.
  2. In a saucepan over medium heat, melt butter. Whisk in flour until smooth, then gradually add milk, stirring until thickened (about 5 minutes).
  3. Remove from heat and mix in cheddar and Monterey Jack until melted. Season with smoked paprika, salt, and pepper.
  4. Combine cheese sauce with pasta in a large bowl; mix well.
  5. Preheat smoker to 225°F (107°C) and transfer mac and cheese into a skillet or aluminum pan. Sprinkle optional breadcrumbs on top.
  6. Smoke for approximately one hour until bubbly and golden brown.
