- 1 pound elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 cups whole milk
- 4 tablespoons unsalted butter
- ½ cup all-purpose flour
- 1 teaspoon smoked paprika
- Salt & pepper to taste
- 1 cup breadcrumbs for topping (optional)
Instructions
- Cook elbow macaroni in boiling water until al dente (7-8 minutes). Drain and set aside.
- In a saucepan over medium heat, melt butter. Whisk in flour until smooth, then gradually add milk, stirring until thickened (about 5 minutes).
- Remove from heat and mix in cheddar and Monterey Jack until melted. Season with smoked paprika, salt, and pepper.
- Combine cheese sauce with pasta in a large bowl; mix well.
- Preheat smoker to 225°F (107°C) and transfer mac and cheese into a skillet or aluminum pan. Sprinkle optional breadcrumbs on top.
- Smoke for approximately one hour until bubbly and golden brown.
