- 2 acorn squashes
- 1 lb ground sausage (Italian preferred)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup breadcrumbs (plain or seasoned)

- 2 cups fresh spinach
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Halve the acorn squashes lengthwise and scoop out the seeds. Place them cut side up on a baking sheet.
- In a skillet, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes).
- Add garlic and sausage; cook until browned (7-10 minutes). Stir in spinach until wilted.
- Mix in breadcrumbs and Parmesan cheese until well combined.
- Generously fill each squash half with the sausage mixture. Drizzle with olive oil.
- Cover with foil and bake for 30 minutes, then remove foil and bake an additional 15 minutes until golden.
