  • 2 acorn squashes
  • 1 lb ground sausage (Italian preferred)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the acorn squashes lengthwise and scoop out the seeds. Place them cut side up on a baking sheet.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent (about 5 minutes).
  4. Add garlic and sausage; cook until browned (7-10 minutes). Stir in spinach until wilted.
  5. Mix in breadcrumbs and Parmesan cheese until well combined.
  6. Generously fill each squash half with the sausage mixture. Drizzle with olive oil.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake an additional 15 minutes until golden.
