  • 3 lbs chuck roast
  • 4 cloves garlic, whole
  • 3 medium carrots, chopped
  • 2 medium yellow onions, chopped
  • 2 stalks celery, chopped
  • 28 oz can crushed tomatoes
  • 1 cup red wine
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 2 cups beef broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast on all sides until browned (about 3-4 minutes per side).
  3. Remove the roast from the pot. Add onions, garlic, carrots, and celery; sauté until softened (about 5 minutes).
  4. Pour in red wine, scraping any brown bits from the bottom of the pot; let simmer for about 2-3 minutes.
  5. Stir in crushed tomatoes and beef broth; add oregano and basil. Return the seared roast to the pot.
  6. Cover tightly with a lid and transfer to the preheated oven. Cook for about 3-4 hours until fork-tender.
  7. Remove from oven and let rest before slicing. Serve with crusty bread or creamy mashed potatoes.
