- 4 cloves garlic, whole
- 3 medium carrots, chopped
- 2 medium yellow onions, chopped
- 2 stalks celery, chopped
- 28 oz can crushed tomatoes
- 1 cup red wine
- 2 tsp dried oregano
- 2 tsp dried basil
- 2 cups beef broth
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (160°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast on all sides until browned (about 3-4 minutes per side).
- Remove the roast from the pot. Add onions, garlic, carrots, and celery; sauté until softened (about 5 minutes).
- Pour in red wine, scraping any brown bits from the bottom of the pot; let simmer for about 2-3 minutes.
- Stir in crushed tomatoes and beef broth; add oregano and basil. Return the seared roast to the pot.
- Cover tightly with a lid and transfer to the preheated oven. Cook for about 3-4 hours until fork-tender.
- Remove from oven and let rest before slicing. Serve with crusty bread or creamy mashed potatoes.
