  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 medium sweet onions, thinly sliced
  • 4 cloves garlic, crushed
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 4 cups Yukon Gold potatoes, peeled and cubed
  • 1/4 cup all-purpose flour
  • 1/2 tsp freshly ground black pepper
  • Fresh thyme or parsley for garnish

Instructions

  1. Chop onions and garlic finely. Cut beef chuck into 1-inch cubes.
  2. In a large pot over medium-high heat, add oil and sear the beef until browned on all sides. Remove beef from pot.
  3. Add onions and garlic to the pot; cook until onions are translucent.
  4. Sprinkle flour over the onion mixture, stirring for about two minutes until golden brown.
  5. Gradually pour in beef broth and Worcestershire sauce while stirring to prevent lumps. Bring to a simmer.
  6. Return the seared beef to the pot; cover and cook on low heat for about 1.5 hours until fork-tender.
  7. Serve over creamy mashed potatoes, garnished with fresh herbs.
