Ingredients

Scale
  • 6 oz thick-cut bacon, chopped
  • 3 cups day-old cooked jasmine rice
  • 2 green onions, sliced
  • 1 cup diced carrots
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 2 large eggs

Instructions

  1. Prepare your ingredients by chopping the bacon and dicing the carrots.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove bacon but reserve the fat in the pan.
  3. Sauté carrots and minced garlic in the remaining bacon fat for about 3 minutes until fragrant.
  4. Add day-old rice to the skillet, breaking apart clumps gently while mixing with the veggies.
  5. Push rice to one side and scramble two eggs in the empty space until just set; then mix back with rice and crispy bacon.
  6. Drizzle soy sauce over the mixture and toss in green onions; stir until well combined and heated through.
