  • 4 medium zucchinis (sliced into rounds)
  • 1 lb ground turkey or beef (lean)
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 1 cup diced bell peppers (mixed colors)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground meat until browned; drain excess fat.
  3. Stir in pizza sauce, bell peppers, and Italian seasoning; simmer for 5 minutes.
  4. In a greased baking dish, layer half of the zucchini slices, followed by half of the meat mixture and half of the cheese. Repeat layers.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
