  • 1 lb ground turkey
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 8 oz rigatoni pasta
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Gather and prepare ingredients by chopping spinach and mincing garlic.
  2. In a large bowl, combine ground turkey, ricotta cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.
  3. Shape the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  4. Boil salted water in a large pot and cook rigatoni according to package instructions until al dente. Drain, reserving some pasta water.
  5. Bake meatballs for approximately 20 minutes until golden brown.
  6. In a skillet, heat olive oil over medium heat. Add minced garlic until fragrant, then add spinach and sauté until wilted.
  7. Toss cooked rigatoni with sautéed spinach in the skillet, adding reserved pasta water as needed. Serve meatballs on top.
