- 2 lbs Yukon Gold potatoes, thinly sliced
- 4 medium ripe tomatoes, sliced
- 2 cups fresh mozzarella cheese, shredded
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- Salt & pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a medium-sized baking dish with olive oil or butter.
- Layer half of the sliced potatoes in the dish. Season with salt, pepper, and half of the minced garlic. Add half of the sliced tomatoes on top.
- Pour half of the heavy cream over the first layer and sprinkle half of the mozzarella cheese.
- Repeat layering with remaining ingredients.
- Cover with foil and bake for 40 minutes until potatoes are tender. Remove foil and bake for an additional 15-20 minutes until golden brown and bubbly.
- Let it rest before serving.
