- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C). Peel and chop the sweet potatoes into cubes. Boil in salted water until fork-tender, about 15-20 minutes.
- Drain and transfer sweet potatoes to a mixing bowl. Add melted butter, maple syrup, brown sugar, cinnamon, vanilla extract, and eggs. Mash until smooth.
