  • 1 pound ground chicken
  • 2 tsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 4 green onions, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp lime juice (fresh)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. In a large bowl, combine ground chicken, minced garlic, grated ginger, chopped green onions, and cilantro. Mix until well combined.
  2. Form small meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  3. Heat a skillet over medium heat with some oil. Cook meatballs for about 10 minutes until golden brown and fully cooked.
  4. In another pan, mix coconut milk, red curry paste, soy sauce, and lime juice; heat until bubbly.
  5. Add the cooked meatballs to the coconut curry sauce and let simmer for 5-10 minutes to meld flavors.
  6. Serve over jasmine rice or noodles and garnish with extra cilantro and lime wedges.
