  • 1 lb boneless, skinless chicken breasts, diced
  • 3 cloves fresh garlic, minced
  • 4 green onions, finely chopped
  • 1 cup bell peppers, diced (red or yellow)
  • 8 large lettuce leaves (Butter or Romaine)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1 tbsp chili sauce (optional)

Instructions

  1. Heat sesame oil in a large skillet over medium heat. Add diced chicken and sauté until golden brown and fully cooked.
  2. Stir in minced garlic and chopped green onions; cook until fragrant, about 1 minute.
  3. Add diced bell peppers and stir-fry briefly until tender.
  4. In a small bowl, mix soy sauce, rice vinegar, and cornstarch; pour over the chicken mixture while stirring continuously until thickened.
  5. Wash lettuce leaves under cold water and pat dry gently.
  6. Assemble wraps by spooning the chicken filling into each lettuce leaf. Garnish with extra green onions if desired.
