  • 8 oz rotini pasta
  • 1 lb lean ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 14.5 oz can diced tomatoes (fire-roasted recommended)
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, diced (any color)
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Cook the rotini in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
  3. Add ground meat and diced bell peppers; cook until meat is browned.
  4. Stir in taco seasoning and diced tomatoes; simmer for 5 minutes.
  5. Fold in cooked pasta and cheddar cheese until combined and creamy.
  6. Serve topped with sour cream or Greek yogurt, garnished with cilantro or green onions if desired.
