  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup dark brown sugar
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 tsp ground cinnamon
  • ½ tsp freshly grated nutmeg
  • 1 tsp pure vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C). Prick sweet potatoes with a fork and roast on a baking sheet until tender, about 45 minutes.
  2. Once cool, scoop out the flesh into a bowl. Add brown sugar, butter, heavy cream, cinnamon, nutmeg, and vanilla extract; blend until smooth.
  3. Incorporate eggs one at a time while blending until creamy and well combined.
  4. Grease an 8-inch square baking dish. Pour in the sweet potato mixture evenly.
  5. Bake for 40-45 minutes until set around the edges but slightly jiggly in the center.
  6. Cool for 10-15 minutes before serving. Top with whipped cream if desired.
