Instructions
- Preheat your oven to 350°F (175°C). Peel and chop sweet potatoes into chunks; boil until tender.
- Drain and mash the sweet potatoes until smooth.
- In a large bowl, cream together the butter and sugar until fluffy. Beat in eggs one at a time, followed by vanilla and mashed sweet potatoes.
- In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually fold dry ingredients into the wet mixture until combined.
- Pour batter into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean. Allow to cool before serving.
