  • 2 medium sweet potatoes (about 2 cups mashed)
  • 1 cup unsalted butter, room temperature
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and chop sweet potatoes into chunks; boil until tender.
  2. Drain and mash the sweet potatoes until smooth.
  3. In a large bowl, cream together the butter and sugar until fluffy. Beat in eggs one at a time, followed by vanilla and mashed sweet potatoes.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually fold dry ingredients into the wet mixture until combined.
  5. Pour batter into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean. Allow to cool before serving.
