  • 4 medium sweet potatoes (about 2 lbs), peeled and diced
  • 1 cup panko breadcrumbs
  • 2 tbsp extra virgin olive oil
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Salt & pepper to taste
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss diced sweet potatoes with olive oil, cinnamon, nutmeg, salt, and pepper until well-coated.
  3. In another bowl, mix panko breadcrumbs with brown sugar and nuts (if using).
  4. Spread sweet potato mixture evenly in a greased baking dish.
  5. Top with the panko mixture.
  6. Bake for 30-35 minutes or until sweet potatoes are tender and the topping is golden brown.
