- 3–4 medium sweet potatoes (about 2 lbs), peeled and cubed
- 1/4 cup unsalted butter
- 1/2 cup light brown sugar
- 1 cup pecans, chopped
- 1 tsp ground cinnamon

- 1/2 cup whole milk (or almond/oat milk)
- 1/4 tsp salt
Instructions
- Preheat oven to 400°F (200°C). Boil the cubed sweet potatoes in salted water for about 15 minutes until tender. Drain.
- In the pot, mash sweet potatoes and mix in butter, brown sugar, vanilla, cinnamon, milk, salt, and eggs until smooth.
- Transfer the mixture to a greased baking dish.
