  • 1 cup fresh breadcrumbs
  • 1 medium sweet onion, finely chopped
  • 2 tbsp fresh dill (or 1 tbsp dried dill)
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 2 medium carrots, chopped
  • 2 medium potatoes, diced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, onion, dill, allspice, nutmeg, salt, and pepper. Mix well and form into 1-inch meatballs.
  3. Place meatballs on a parchment-lined baking sheet and bake for 15–20 minutes until browned.
  4. In a large pot over medium heat, sauté chopped carrots in olive oil for about 5 minutes.
  5. Add chicken broth and heavy cream; bring to a gentle simmer.
  6. Incorporate diced potatoes and baked meatballs; cook for an additional 15 minutes until potatoes are tender.
  7. Stir in fresh dill before serving.
