  • 1/4 cup gochujang
  • 1/4 cup honey
  • 2 tbsp low-sodium soy sauce
  • 3 garlic cloves, minced
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar (unseasoned)
  • 1 tsp ground ginger
  • Chopped green onions for garnish

Instructions

  1. In a bowl, whisk together gochujang, honey, soy sauce, minced garlic, sesame oil, rice vinegar, and ground ginger until smooth.
  2. Place chicken thighs in a resealable bag or bowl; pour marinade over them ensuring they are well-coated. Marinate in the fridge for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Arrange marinated chicken on a parchment-lined baking sheet. Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C) and the chicken is golden brown.
  5. Optional: Brush extra marinade during the last few minutes of baking for more flavor.
  6. Let the chicken rest briefly before slicing and garnish with chopped green onions.
