- 2 green onions, chopped
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions
- Soak the rice noodles in hot water according to package instructions until tender but firm. Drain and set aside.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the sliced flank steak and cook until browned, about 3-4 minutes.
- Stir in minced garlic and grated ginger; sauté until fragrant, about 1 minute.
- In a bowl, whisk together soy sauce, brown sugar, cornstarch mixture, and Sriracha if using. Pour into the skillet with the beef.
- Gently fold in cooked noodles and mix well. Cook for another 2-3 minutes until heated through.
- Drizzle sesame oil over the dish and garnish with chopped green onions before serving.
