  • 6 oz crumbled feta cheese
  • 1 sheet puff pastry (thawed)
  • 3 large eggs
  • 1 medium onion (finely chopped)
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent (about 5 minutes).
  3. Add fresh spinach to the skillet and cook until wilted (2-3 minutes). Remove from heat.
  4. In a mixing bowl, whisk together eggs, feta cheese, garlic powder, salt, and pepper. Fold in the sautéed spinach and onion mixture.
