Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheddar cheese
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Rinse and dry the spinach leaves thoroughly. In a large bowl, combine chopped spinach, shredded cheese, beaten eggs, garlic powder, salt, and pepper; mix well.
  3. Scoop tablespoon-sized mounds of the mixture onto the prepared baking sheet, leaving space between each mound.
  4. Bake for 15-20 minutes or until golden brown. Allow to cool for a few minutes before serving.
