  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup heavy cream
  • 1 tsp garlic powder
  • 2 tbsp unsalted butter, melted
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Halve the spaghetti squash lengthwise and scoop out the seeds. Brush cut sides with olive oil, season with salt and pepper, and place cut-side down on a baking sheet lined with parchment paper.
  2. Roast for 40-45 minutes until tender. Cool slightly, then scrape squash flesh into strands using a fork.
  3. In a large bowl, mix shredded cheddar, grated Parmesan, heavy cream, garlic powder, melted butter, salt, and pepper until well combined.
  4. Fold in spaghetti squash strands until evenly coated.
  5. Transfer mixture to a greased baking dish. Top with additional cheese if desired. Bake for another 20-25 minutes until bubbly and golden brown.
