- 4 large Russet potatoes
- 1 cup peeled and deveined shrimp
- 1 cup lump crab meat
- 8 oz cream cheese (softened)
- 1/4 cup chopped green onions
- 1 cup shredded sharp cheddar cheese
- 2 tsp Old Bay seasoning
- 2 tbsp butter (melted)
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean, poke holes in them and bake directly on the rack for 45-60 minutes until tender.
- In a skillet over medium heat, melt butter and sauté shrimp with Old Bay seasoning until pink. Remove from heat and let cool.
- Once potatoes are cool enough to handle, scoop out insides into a bowl, leaving a small amount in the skins. Mix potato flesh with cream cheese, crab meat, sautéed shrimp, green onions, shredded cheddar, and remaining melted butter.
- Stuff mixture into potato skins and top with extra cheddar if desired. Bake at 375°F (190°C) for an additional 15-20 minutes until heated through and cheese is bubbly.
