Description

Southern-Style Seafood Stuffed Potatoes are a comforting and delicious dish that combines fluffy baked potatoes with a rich seafood filling.   • 4 large Russet potatoes
  • 1 cup peeled and deveined shrimp
  • 1 cup lump crab meat
  • 8 oz cream cheese (softened)
  • 1/4 cup chopped green onions
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp Old Bay seasoning
  • 2 tbsp butter (melted)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean, poke holes in them and bake directly on the rack for 45-60 minutes until tender.
  2. In a skillet over medium heat, melt butter and sauté shrimp with Old Bay seasoning until pink. Remove from heat and let cool.
  3. Once potatoes are cool enough to handle, scoop out insides into a bowl, leaving a small amount in the skins. Mix potato flesh with cream cheese, crab meat, sautéed shrimp, green onions, shredded cheddar, and remaining melted butter.
  4. Stuff mixture into potato skins and top with extra cheddar if desired. Bake at 375°F (190°C) for an additional 15-20 minutes until heated through and cheese is bubbly.
