  • 1 lb ground beef (80/20)
  • 6 slices thick-cut bacon
  • 1 cup mayonnaise
  • 1 tsp garlic powder
  • 2 tbsp bacon grease (reserved from cooking bacon)
  • 1 tsp lemon juice
  • Salt and pepper (to taste)
  • 4 cheese slices (your choice)
  • 4 brioche or potato burger buns

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Reserve the grease.
  2. In a bowl, mix mayonnaise, bacon grease, garlic powder, and lemon juice until creamy to make baconnaise.
  3. Divide ground beef into four portions, gently shaping them into balls.
  4. Preheat a cast-iron skillet over high heat. Place each beef ball in the pan and smash it down to about ½ inch thick.
  5. Season with salt and pepper; cook for 3-4 minutes. Flip the burgers and add cheese slices to melt.
  6. Toast buns cut-side down in another skillet until golden brown.
  7. Assemble by spreading baconnaise on each bun, adding the burger patty, and topping as desired.
