  • 2 lbs beef chuck roast
  • 2 medium sweet onions, chopped
  • 3 medium carrots, chopped
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Prepare your vegetables by peeling and chopping the onions and carrots.
  2. Sear the beef chuck roast in a skillet over medium-high heat until golden brown on all sides.
  3. Transfer the seared roast to the slow cooker and add chopped onions, garlic, carrots, bay leaves, Worcestershire sauce, salt, pepper, and beef broth.
  4. Cover and cook on low for 8-10 hours or high for 4-5 hours.
  5. If desired, mix cornstarch with cold water to thicken the gravy during the last 30 minutes of cooking.
  6. Shred or slice the beef before serving hot over mashed potatoes or rice.
