  • 1 lb fresh large shrimp, peeled and deveined
  • 1 cup fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • ¼ cup red wine vinegar
  • ⅓ cup extra virgin olive oil
  • ½ tsp red pepper flakes (adjust to taste)

Instructions

  1. In a bowl, combine parsley and garlic. Add red wine vinegar and olive oil; mix well. Stir in red pepper flakes.
  2. Place shrimp in another bowl and pour half of the chimichurri sauce over them. Toss to coat and marinate in the fridge for at least 15 minutes.
  3. Preheat grill or skillet to medium-high heat (about 400°F). Cook shrimp for 2-3 minutes on each side until pink and opaque.
  4. Return shrimp to the bowl with remaining chimichurri sauce; toss gently.
  5. Serve warm with extra chimichurri drizzled on top.
