Description

Shredded Chicken & Rice Stuffed Peppers are a colorful and nutritious dish, perfect for family dinners or gatherings.   • 4 large bell peppers (red, yellow, or green)
  • 2 cups shredded rotisserie chicken
  • 1 cup cooked white or brown rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ cup tomato sauce
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped onions until translucent. Add garlic and cook until fragrant.
  3. In a large bowl, mix shredded chicken, cooked rice, sautéed onions and garlic, spices, and tomato sauce.
  4. Cut the tops off the bell peppers and remove seeds. Stuff each pepper generously with the chicken-rice mixture.
  5. Top each stuffed pepper with shredded cheddar cheese.
  6. Place peppers upright in a baking dish with water at the bottom. Cover with foil and bake for 30 minutes; uncover for another 10-15 minutes until cheese is bubbly.
