  • 1 sheet puff pastry (thawed)
  • 1 cup fresh cremini mushrooms (sliced)
  • 1 cup fresh shiitake mushrooms (sliced)
  • 1 cup Gruyère cheese (grated)
  • 1 medium sweet onion (chopped)
  • 2 cloves garlic (minced)
  • 1 egg (for egg wash)
  • 2 tsp olive oil
  • 1 tbsp fresh thyme or parsley (chopped)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onions until soft, about 5 minutes. Add minced garlic and cook until fragrant.
  2. Add sliced mushrooms and cook until golden brown, around 8-10 minutes.
  3. Remove from heat and mix in grated Gruyère cheese and herbs until well combined.
  4. Preheat the oven to 400°F (200°C). Roll out puff pastry on a floured surface to about 1/8 inch thick. Cut slits on both sides for braiding.
  5. Spoon the mushroom mixture down the center of the pastry. Fold dough strips in an alternating crisscross pattern over the filling and seal edges.
  6. Brush with egg wash for a golden finish. Bake on a lined baking sheet for 25-30 minutes until puffed and golden.
