  • 1 lb boneless chicken thighs
  • 1/2 cup creamy peanut butter
  • 1/2 cup coconut milk
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 3 garlic cloves, minced
  • 1-inch piece ginger root, grated
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

  1. In a large bowl, whisk together the coconut milk, peanut butter, soy sauce, lime juice, minced garlic, and grated ginger until smooth.
  2. Cut the chicken thighs into bite-sized pieces and coat them in the marinade. Cover and refrigerate for at least 1 hour or overnight.
