Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a springform pan; bake for about 10 minutes until golden brown.
  2. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sour cream, brown sugar, and granulated sugar until fully combined. Stir in vanilla extract.
  3. Add eggs one at a time on low speed; do not overmix. Pour filling over the crust and spread evenly. Bake for 50-60 minutes until set yet slightly jiggly in the center. Cool completely before chilling for at least four hours.
  4. For butterscotch sauce: Combine brown sugar, butter, and heavy whipping cream in a saucepan over medium heat. Stir continuously until bubbling, then simmer until thickened.
  5. Once chilled, top the cheesecake with salted popcorn and drizzle with butterscotch sauce; finish with sea salt flakes.
