  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ cups warm water (110°F/43°C)
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary, finely chopped
  • 1 cup grated Parmesan cheese
  • ¼ cup baking soda (for boiling)
  • Coarse sea salt (for topping)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until foamy.
  2. Add flour, salt, olive oil, rosemary, and Parmesan cheese. Mix until a shaggy dough forms.
  3. Knead on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover it, and let it rise in a warm area until doubled in size (about 1 hour).
  5. Punch down the dough and divide into 8 pieces; roll each into ropes and twist into pretzel shapes.
  6. Boil water with baking soda; boil each pretzel for 30 seconds on each side before placing on a parchment-lined baking sheet.
  7. Preheat oven to 425°F (220°C). Brush pretzels with melted butter and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until golden brown.
