- 1 cup grated Parmesan cheese
- ¼ cup baking soda (for boiling)

Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until foamy.
- Add flour, salt, olive oil, rosemary, and Parmesan cheese. Mix until a shaggy dough forms.
- Knead on a floured surface for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover it, and let it rise in a warm area until doubled in size (about 1 hour).
- Punch down the dough and divide into 8 pieces; roll each into ropes and twist into pretzel shapes.
- Boil water with baking soda; boil each pretzel for 30 seconds on each side before placing on a parchment-lined baking sheet.
- Preheat oven to 425°F (220°C). Brush pretzels with melted butter and sprinkle with coarse sea salt.
