  • 1 cup all-purpose flour
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 cup grated Parmesan cheese
  • ½ cup unsalted butter, cold and cubed
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper (optional)
  • 1 egg yolk
  • 2 tablespoons cold water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Stir in grated Parmesan and chopped rosemary until evenly mixed.
  4. In a small bowl, whisk together egg yolk and cold water. Gradually add to the flour mixture, stirring until just combined.
  5. Roll out dough on a floured surface to about ¼ inch thick. Cut into strips using a sharp knife.
  6. Place strips on a lined baking sheet, brush with remaining egg wash, and bake for 12-15 minutes until golden brown.
  7. Cool slightly on a wire rack before serving.
