  • 1 lb fresh Brussels sprouts, halved
  • 2 ripe Bosc or Anjou pears, diced
  • 1 cup fresh cranberries
  • 3 tbsp extra virgin olive oil
  • 2 tbsp raw honey (or maple syrup)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup pecans (optional), toasted

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Trim and halve the Brussels sprouts. Rinse and pat dry.
  3. 3. In a large bowl, combine Brussels sprouts, diced pears, cranberries, olive oil, honey, salt, and pepper. Toss until well-coated.
  4. 4. Spread the mixture on a parchment-lined baking sheet in a single layer.
  5. 5. Roast for 25-30 minutes until tender and caramelized, stirring halfway through.
  6. 6. If using pecans, add them in the last five minutes of roasting.
